Beat the Summer Heat With This Zesty Lemon Coconut Pudding

Ingredients:

2 cups young coconut
½ tsp. lemon extract
1 tsp. vanilla
½ tsp. almond extract
1 ½ Tbsp. lemon juice
2 drops stevia
½ tsp. honey
1 pinch sea salt
1 cup water
1 cup of ice cubes

Directions:

  1. In a high-speed blender, blend all ingredients except the ice until smooth. Taste and adjust the sweetness if necessary.
  2. Add the ice and blend again until cool and creamy.
  3. Serve in small ramekin dishes and garnish with lemon zest.

Note: Makes a total of six servings.

Choose a coconut that is heavy and listen for a splashing sound when shaken — this means it’s full of water. If you’re having trouble finding young coconut, the next best alternative is canned organic coconut meat.

Choose shiny bright yellow lemons. They should be thick-skinned and heavy with juice. Don’t pick green lemons, as these are not yet ripe and more acidic.
