Beat the Summer Heat With This Zesty Lemon Coconut Pudding

This recipe is delicious and nutritious. Lemons and coconuts offer complimentary health benefits and their contrasting flavors provide a perfect balance of sweet and sour. There is no better way to chill out on a hot summer day than with a serving of zesty lemon coconut pudding, the perfect dessert for the whole family.


2 cups young coconut
½ tsp. lemon extract
1 tsp. vanilla
½ tsp. almond extract
1 ½ Tbsp. lemon juice
2 drops stevia
½ tsp. honey
1 pinch sea salt
1 cup water
1 cup of ice cubes


  1. In a high-speed blender, blend all ingredients except the ice until smooth. Taste and adjust the sweetness if necessary.
  2. Add the ice and blend again until cool and creamy.
  3. Serve in small ramekin dishes and garnish with lemon zest.

Note: Makes a total of six servings.

Choosing the Best Ingredients for the Job

coconutThe coconut recommended for this recipe should be young and green, with soft, gel-like and creamy meat. Choose a coconut that is heavy and listen for a splashing sound when shaken — this means it’s full of water. If you’re having trouble finding young coconut, the next best alternative is canned organic coconut meat.

Choose shiny bright yellow lemons. They should be thick-skinned and heavy with juice. Don’t pick green lemons, as these are not yet ripe and more acidic.

As for honey, make sure it is raw, unfiltered, 100 percent pure and from a trusted source. Note that honey is 53% fructose. One teaspoon of honey is equal to 4 grams of fructose, which can worsen preexisting insulin resistance and negatively impact your health.

If you have insulin resistance, it’s best to stay away from honey or any other kind of sweetener, since your insulin sensitivity will be affected.
